More and more people are avoiding wheat. About 1 in 133 people become sick when they eat gluten, a protein found in wheat and some other grains (this sensitivity is called Celiac Disease or Gluten Intolerance). Another group of people are allergic to wheat, and while the numbers are unclear, they are certainly increasing. Still more people, who are able to tolerate wheat, find that they just feel and look better when they avoid foods made with wheat.

But it’s hard to eliminate wheat! Breads, cereals, pancakes, waffles, pastries, bagels, sandwiches, pastas, crackers, biscuits, pretzels, cookies, cakes, and lots of other less obvious foods are sources of wheat. Take those away, and the diet is pretty limited.
